Meal Planning for Real Life (Edison)

This workshop is not about Pinterest-perfect meal prep — it’s about building a realistic, flexible system that works for your actual life. In this course, students will create a personalized “Flexible Playbook” for meal planning that reduces stress, saves mental energy, and makes weeknight meals feel more manageable.

Participants will learn how to:

  • End Decision Fatigue: Use a simple 6-step meal planning system to move the “What’s for dinner?” question from a last-minute stressor to a calm, confident decision.
  • Build a Flexible Meal Planning System: Create a personalized list of reliable “go-to” meals that work even on busy nights.
  • Plan with Real Life in Mind: Begin building a practical meal plan for the upcoming week with guidance, support, and collaborative discussion during class.
  • Make Meal Planning Sustainable: Learn strategies that prioritize flexibility, ease, and consistency over perfection.

By the end of the workshop, students will leave with a customized framework they can continue using long after class — one that helps simplify meals, reduce overwhelm, and support healthier routines without rigid rules.

Amber Hanson is a licensed nutritionist, Certified Nutrition Specialist® practitioner, and a Certified Intuitive Eating Counselor with a passion for food and cooking. She founded Whole You Nutrition in 2018 to offer the weight-inclusive nutrition support she wishes she had access to as a person who lives in a larger body.

Amber likes helping people with a history of dieting and body image struggles find peace with food and body using an anti-diet gentle nutrition approach based on the principles of Intuitive Eating.

She enjoys digging into the details of each client’s unique health history and day-to-day reality to help them find pleasure in food, let go of body shame, and nourish their well-being.

Amber knows a person is not just a number on the scale, a medical diagnosis, a job title, or a relationship status. She meets each client where they are, without judgement, to empower them to live their best life.

She sees clients in-person and virtually from a private office in Minneapolis, MN.

Prior to entering the field of nutrition, Amber centered her career around food as a chef, food product developer, recipe developer, and food stylist. Her passion for food and cooking still carries over to her work as a nutritionist where she continues to develop new recipes that she shares on the website.

Amber's education includes a Masters in Applied Clinical Nutrition from Northeast College of Health Sciences, a BS in Food Science and Nutrition Dietetics from the University of Minnesota, Twin Cities, and AAS in Culinary Arts from AI Minnesota.

When Amber isn’t working with clients you can find her cooking and baking in her kitchen, sewing or crafting, reading a book (an eclectic mix of literary, thrillers, and romance), or hiking in the woods.
